On Wednesday morning October 19th 2022 at approximately 0740 while observing the evisceration process, I heard the employee stunning the animals yell, CLEAR and heard a gunshot (45ACP). I then heard a beef bellow loudly and looked to see it still standing. I observed the employee quickly and immediately administering another gunshot (45ACP) which rendered the animal unconscious. I then notified REDACTED the Slaughter floor Supervisor, REDACTED HACCP Coordinator who were both standing near and REDACTED Plant manager located in his office, of the Non Compliance and the forth coming NR.
