On 07/25/2023 at approximately 0830 hrs. at the knock-box area in the kill floor, an animal (beef cow) jumped through the knock box opening and ran into the kill-floor area. I was present at the kill floor final rail when this incident happened and observed that the animal seemed very excited. I had also observed that the employees responsible for knocking the animals did not have a calm demeanor and this could have caused the animal to get excited and react aggressively. The establishment eventually managed to control the situation and have the animal return back into the cattle holding pen situated next to the kill floor knock-box area. Also present on the kill floor were carcasses being trimmed at the final rail for USDA zero tolerance inspection and USDA inspected variety meats on the head table and the puck/liver disposition table. I placed the Kill floor on a USDA hold to ensure that all sanitary conditions are completely restored, and all exposed inspected variety meats were condemned. I notified REDACTED, Food Safety/Production Manager and REDACTED, Kill Floor Superintendent that this incident will be documented as a Humane Handling non-compliance record as the establishment did not comply with the requirements in 9CFR 313.2 and 9CFR313.15(a)(2).
