381.65(b)
On 07/27/2022, during young chicken slaughter operations of the first lot from approximately 7:05am till 7:50am, I observed 5 (five), chickens on the evisceration line having a deep red coloring of the skin. This condition is the result of not properly bleeding the chickens before they enter the scalder resulting in a condition called "Cadavers", which is in non-compliance of the 9CFR 381.65(b). The chickens were removed from the line and condemned. I informed slaughter floor supervisor, Mr. REDACTED, of the forthcoming NR. He immediately went to the kill room and informed the person bleeding the chickens of the situation and later informed me that he had sharpened some blades for the knife used to make the bleed cut. This action seemed to cure the problem as only one other chicken was condemned for the same condition throughout the rest of the days slaughter. A review in PHIS Non Compliance Records showed that no similar NRs had been written or issued within the past 90 days.
