Non-Compliance Description:

On August 31, 2022 at approximately 0600 hours FLS REDACTED and IIC REDACTED observed the following noncompliance while performing a routine humane handling task at Gary's Meats (M21108). While performing an ante mortem inspection it was observed the water trough in holding pen #1 did not have any water available to the seven beef being held in the pen. Two holding pens located along the east side of the holding corrals also did not have any water available to another seven beef being held and presented for ante mortem inspection. Harvest floor supervisor REDACTED was immediately notified of the noncompliance. HACCP Coordinator REDACTED was notified a Noncompliance Record would be issued. The start of the day's harvest procedures were delayed and Mr. REDACTED immediately began filling the water trough with water. The seven beef in the far east holding pens were placed in the other two beef holding pens. All beef then had access to water and the day's harvest was allowed to begin. Gary's Meats had approximately ten minutes of down time. There are no recent same cause noncompliance records issued in recent times.
