On 5-26-2022 at approximately 1000 hours, at Knights Butchering and Processing (Est# M47418), IIC observed the following humane handling noncompliance. During slaughter operations, an establishment employee attempted to render a steer unconscious using a captive bolt gun. The first attempt was ineffective. The Steer remained standing. No vocalization was observed. The establishment took immediate corrective action and a second application was attempted, with a gun and successfully rendered the animal unconscious. The head was skinned by plant employees and two holes were identified, contacting each other. This situation represents a non-egregious inhumane treatment due to the ineffective stun attempt that were due to the establishment failures. This represents the establishments failure to maintain compliance with federal regulations 9 CFR 313.15(a)(1), 313.15(a)(3), 313.16 (a)(1) and 313.16 (a)(3).

On 5/05/2022 at approximately 1745 hours at Knight’s Butchering and Processing (Est. M47418), IIC observed the following non-compliance while performing a livestock human handling task. IIC observed an establishment employee unsuccessfully attempt to render a lamb unconscious with the captive bolt. The lamb moved as the captive bolt was fired and pierced the animal’s left ear. The animal did not vocalize. The operator then implemented immediate corrective actions by rendering the animal unconscious with a second successful stun with the captive bolt. No Reject Tag was placed on the stunning area due to immediate corrective actions and an establishment representative was immediately notified of this non-compliance verbally. This non-compliance violates code of federal regulation 313.15 (a) (1). On postmortem examination it was confirmed that there were two points of entry into the lamb’s head, one through the ear and one through the skull.

On 5.5.2022, at approximately 0740 hours, at Knights Butchering and Processing (Est. M47418), IIC observe the following non-compliance while performing a Livestock Humane Handling, IIC observed three lambs in the livestock pens alleyway without access to water. Establishment personnel took immediate corrective actions by moving the lambs to a pen with access to water. This represents the establishments failure to maintain compliance with 9 CFR 313.2(e). Establishment Representative REDACTED was notified of this non-compliance verbally. Owner REDACTED was notified of this non-compliance in writing
