Category VIII Stunning Effectiveness At approximately 0810 hours observing the first day of slaughter at establishment 47711 The Butcher Shop at Hyde Farms the Inspection Team; CSI REDACTED and CSI REDACTED observed the following ineffective stun event. A bovine entered the knock box and was restrained in a head catch. The kill floor manager, REDACTED used a rifle to stun the animal and was approximately 5 feet from the animal. Mr. REDACTED fired the rifle on the first attempt to stun the animal, but was ineffective as evidenced by the animal remained standing. The stun operator made five additional stun attempts, which each were ineffective as evidenced by the animal remained standing. At this time the HACCP Coordinator, Mr. REDACTED, retrieved a hand gun. The hand gun was put onto the head of the cow and fired. The animal was rendered insensible by this attempt and remained so thereafter. USDA reject tag B-45643501 was applied to the knock box and Mr. REDACTED, kill floor manager, and Mr. REDACTED, HACCP Coordinator, were notified of the non-compliance and of the regulatory control action.
