Non-Compliance Description:

At approximately 01:45 pm, on 02/09/2024, I, CSI REDACTED, while verifying establishment stunning procedures, the following non-egregious humane handling noncompliance was observed: An establishment employee attempted to stun a heavy calf with a captive bolt gun. The captive bolt discharged, and I observed the beef still standing in the kill box with tracking eye movements. One establishment employee immediately took corrective actions by reloading the captive bolt with a second round and discharged again. The beef was promptly and effectively rendered insensible. PHV Dr. REDACTED examined the head after the heavy calf was bled out. We observed one circular hole in the middle of the forehead and another one on the back of the head where the captive bolt had made contact and pierced the skin. The establishment does not have a robust, systematic approach to humane handling. Plant Manager Mr. REDACTED was informed of the noncompliance. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.
