On June 27, 2024, at approximately 7:05 AM Food Inspector REDACTED was observing stunning (HATS Category VIII) for Steve & Laura, LLC. FI REDACTED observed a failed stunning attempt of a beef steer. The steer was standing in a chute, but its head was not secured in the head catch because its horns were too large. FI REDACTED observed the animal to remain standing after the first stunning attempt by the plant employee using a .410 shotgun. The second establishment employee handed the pre-loaded backup gun (.22 magnum rifle) to the first employee who immediately rendered the animal unconscious with a second shot. FI REDACTED observed the steer drop to the ground and was visibly unconscious. Observation of the head by SPHV REDACTED noted a larger hole that was on midline but lower on the skull. A second smaller hole would be seen to be more centered on the skull. Mr. REDACTED was notified that an NR would be issued for the non-compliance.
