On 3-24-22 the Kill at Est. 13276 was cut short due to limited Cooler space. There were 11 Beef on the Kill Schedule. 6 Beef had to be carried over until the next day due to no space in the Slaughter Cooler. The kill was done at 1145 am. At approximately 1:45 pm I went to make a direct observation of the remaining cattle in the pens that were to be slaughtered the next day and found the following deficiencies in the livestock pens. Pen 1 had no water in the water trough located inside the pen. Upon further observation the water trough auto-fill water line was not working. There was a black water tub on the floor of the pen but the water present inside the tub was a green water and feces mixture. Pen 2 water trough was also dirty with a green water and feces mixture and the auto-fill water line was also inoperable. The black water tub used in cold weather temperatures also had a green water and feces mixture inside. There were 3 large cattle in the pen and it appeared to small for all 3 to lay down comfortably at the same time. Pen 3 water trough also had a mixture of green water and feces present inside it. The auto-fill water line also was not working on the trough. Pen 3 had no extra black water tub present inside the pen. I immediately informed QA Coordinator REDACTED of the deficiencies I had encountered. Mr. REDACTED in turn informed Lead Man REDACTED to go and take care of the water issues and the crowded pen 2. On 1-26-22, 5 cattle were dropped off at the Edes Custom Meats livestock pens and kept overnight to be slaughtered on the next day 1-27-22. At approximately 7:05 am CSI REDACTED was training Food Inspector REDACTED on how to conduct Ante-Mortem Livestock Inspection at very small establishments when the following non-compliance was encountered in the livestock pens. During our direct observation of the water trough in Pen 1 the water in the trough was frozen solid. Upon observation of remaining 2 troughs, the water inside was also frozen solid. I immediately informed lead man REDACTED who was moving the cattle for Ante-Mortem Inspection. Mr. REDACTED in turn immediately proceeded to retrieve two 5-gallon buckets and filled them with fresh water and set them inside the 2 pens where the cattle were present. Edes Custom Meats is not in compliance with 9CFR. 313.2(e). “Animals shall have access to water in all holding pens and, if held longer than 24 hours, access to feed. There shall be sufficient room in the holding pen for animals held overnight to lie down. “
